This simple recipe calls for only 4 ingredients:
*Orange: making marmalade from Seville oranges is really popular here in Great Britain, however Seville oranges are more bitter than other types. If you dislike the bitterness just discard the peel of the orange or substitute it with different type of orange. Choose organic fruit, if possible.
*Lemon: similarly, buy unwaxed organic lemons, if you can.
*Water: plain tap/filtered water is fine here.
*Sweetener: I prefer powdered sweetener in this recipe, but any sweetener should be fine.
TIPS
*I’m using the peel of the orange, which gives a nice crunch to the marmalade. If you dislike the bitterness, make this marmalade without the peel.
*Luckily you don’t need refined sugar nor pectin to make marmalade, however the downside of this version is that this one doesn’t have a long shelf life, basically it should be consumed within a few days. Cook this marmalade on low heat, which helps the pectin to release.
*If you find your marmalade too runny cook it again/longer, bearing in mind that to set completely takes one or two days.
*Since the sweetener I add in the end is just for sweetness, not for preservative reasons, you can adjust it to your taste.

Yields: 6 little jars
Ingredients
*2 lemon
*4.5 glasses of water
*4 tbsp sweetener
Method
1. Wash and cut oranges and lemons into halves, slice them, then cut half wise again. Discard the seeds and place all in a medium sized pan.
2.Add water and bring up to simmer. Cook on low heat, uncovered, stirring often. Cook until peel is soft for about 20 minutes (cooking time might differ on the thickness of the peel).
3. When ready add sweetener or maple syrup if desired.
4.Transfer the marmalade to sterilised jars.

*To Store: store in an air-tight container in the fridge for up to 3-4 days.
