This quick and easy recipe calls for simple household ingredients, it’s naturally gluten and dairy free and low in fat! If you’re a bit hesitant about the ginger taste, don’t worry it’s not overpowering. Creamy, tasty and perfectly balanced! 😊 


2. VEGAN AUBERGINE STEW


You’ll love this vegan one pot aubergine (eggplant) recipe. Easy and simple to cook, the tasty and tender aubergine melts in your mouth, moreover this ultimate comfort food can be on your table in 30 minutes. Aubergine is nutritious and makes an excellent replacement for meat in vegetarian and vegan diets. A satisfying and healthy option! 


3, POACHED PEARS with VANILLA and CINNAMON


It is impossible not to love these fancy poached pears. These sweet fruits have a fabulous flavour and the added cinnamon and vanilla complements nicely the lovely pear taste. As these sweet pears are elegant and hold their shape, they can be served on any special occasion. Enjoy this dessert all year around, best to serve them warm with a scoop of ice cream. 😊




4, BEAN and CORN STUFFED SWEET POTATO


It’s so easy to love this recipe! Sweet potatoes are nutritious and make an excellent replacement for meat in vegetarian and vegan diets. In this recipe, just bake sweet potatoes, stuff with white beans and sweetcorn, sprinkle with finely chopped onion and voila ready! Together these ingredients provide a satisfying, comforting and delicious dish, believe me, the tasty and fluffy sweet potato melts in your mouth. 😊

Pancakes are one of my favourites, but who doesn’t love them? Cinnamon apple ring pancakes are a perfect treat at any time, they’re great for breakfast or as a dessert. This recipe is a good way to add more fruit to your diet, it’s basically, a healthier version of the ordinary pancakes. They're absolutely delicious! 


6, APPLE PIE SMOOTHIE


Do you fancy a super quick breakfast smoothie which by the way tastes like a pie? This Apple pie smoothie is ready in no time! Blend apple, oats, banana and the rest into a creamy smoothie. This cinnamon spiced, healthy autumn drink is not just for mornings but a great treat at any time of the day. Apart from the health benefits, the other bonus is the amazing apple-pie taste. It’s a must try, a heavenly delicious drink!





7, PUMPKIN GRANOLA


 Isn’t it just fun adding pumpkin to various dishes and make your home smell amazing? That’s what happened just now, when I made my usual granola, and I used pumpkin puree too. Oh, boy, I didn’t regret it! What a delightful addition! Pumpkin granola became one of my autumn favourites, I highly recommend that you try it too. Granola is so easy to make, you’ll need only a few cupboard ingredients. The one I’ll show you here is a basic recipe, but you can customize all your future batches with whatever you're in the mood for. This simple granola is the perfect base recipe for your breakfast or snack. Make a few batches ahead of time and enjoy an easy and quick breakfast. Happy snacking!



8, No Bake Vegan PUMPKIN CHEESECAKE in a Glass


I don’t know about you but I truly like autumn, with all the colours, tastes and feelings it brings. Of course, food is huge part of this package, as autumn means the much-loved pumpkin season for many of us. Being a busy woman, I used pumpkin for a pretty simple and quick dessert, namely a vegan pumpkin cheesecake. This dessert can be a nice treat for family and friends, it’s budget and meal prep friendly. The biscuit, cream cheese and the spiced pumpkin puree layers perfectly complement each other. 😊 


9, VEGAN MUSHROOM SAUCE with GNOCCHI


An easy and cosy recipe, one of my favourite comfort dishes! I don’t care about the gloomy days if I cook this dish! This Creamy Mushroom Sauce with Gnocchi is not only quick and easy to make, but full of rich and delicious flavours. This budget friendly dish is a perfect weeknight meal, it comes together in only 20 minutes! The mushroom cream sauce is not only tasty but also vegan and low in calories. 


10, PUMPKIN SPICE LATTE



Learn how to make homemade Pumpkin Spice Latte so you can enjoy a delicious and cosy drink! Nothing warms the soul more than warm drinks on cold autumn and winter evenings. This comforting fall beverage is wonderfully spiced and it’s so simple to make at home. If you are having friends over, it’s easy to multiply this recipe, just make a big pot of coffee, mix with pumpkin puree and serve it with vegan whipped cream on top. Yum!
