Healthy Lemon and Coconut Bliss Balls

I'm a big fan of all things with lemon and coconut, so this dessert is a total bliss for me! Packed with ground almond, honey and lemon, these bliss balls are the perfect no bake snack or treat! This recipe is so simple you don’t even need a blender as you can mix the ingredients together with your hands. All you need is 4 ingredients and a few minutes! Yay! Also, this dessert is totally gluten and dairy free, and naturally sweetened with honey. These energizing and refreshing treats are loaded with lemon flavour and vitamin C goodness, the honey beautifully compliments the tangy lemon. Stash some in the fridge or freezer for a quick and healthy snack! 😊

  

YOU’LL NEED

Here are the ingredients you’ll need to make this recipe:

*Ground almond: I used ground almond here.

*Shredded coconut: use shredded or desiccated coconut, which adds a wonderful flavour.

*Honey: I used honey for sweetness, but you could use liquid sweetener instead.

*Lemon: you will need lemon juice as well as some lemon zest, so make sure you use organic and unwaxed lemon here. The zest gives this snack a gorgeous citrus zing.

 

TIPS

*If the balls are a bit sticky place them in an airtight container in the fridge. Alternatively add more ground almond.

*You can double the portion and pile these bliss balls in your fridge/freezer for busy weekdays.

HEALTHY LEMON and COCONUT BLISS BALLS

(gluten, wheat and refined sugar free)

 

Preparation time: 5 minutes

Total time: 5 minutes

Yields: 12-13 balls

 

Ingredients

*1 and ⅓ cup of ground almond

*1 cup shredded coconut

*¼ cup honey

*juice of ½ a lemon

*zest of 1 lemon

 

Method

1. Mix honey with lemon juice and lemon zest. Add ground almond.

2. Roll small balls with your hand and roll them into the shredded coconut.

Enjoy! 😊

 

Notes

* To Store: keep in an airtight container the fridge or room temperature for 3-4 days.

*To Freeze: keep in the freezer for up to 3 months.
