Ingredients
*100g curly kale
*350g pack gnocchi
*2 tbsp extra virgin olive oil
*2 garlic cloves
*handful of pine nuts
*salt & pepper to taste
Method
1. Fill a pot with water and bring to the boil. Add gnocchi and cook according to instructions. Drain.
2. Peel and finely chop the garlic. Wash and chop kale.
3. Heat one tablespoon of oil in the frying pan, add the garlic and kale and stir-fry for 6-8 minutes or until the kale is tender.
4. Remove kale, add a tablespoon of oil and fry gnocchi for a few minutes or until crisp outside.
5. Mix gnocchi with kale. Add toasted pine nuts if required.

*Best fresh.
*To Store: make gnocchi fresh. Store this fried kale in sealed container in the fridge for 3 days.
