Raw Veggie Salad Bowl

If you’re anything like me, you feel that your body regularly and naturally craves a variety of vegetables, even raw ones. This salad is super simple and requires very minimal effort, moreover it combines some really amazing flavours and textures! Make a dressing of your choice (I’m giving you a few ideas on this below), then, just toss everything together in a bowl and you can enjoy this salad in 5 minutes or less! Law in fat and naturally gluten and dairy free! Yay!😊



YOU'LL NEED

These are the main ingredients you need for this recipe:

*Mixed lamb lettuce

*Pomegranate seed

*Cherry tomatoes

*Rocket leaves

*Baby corn

*Walnut

*Carrot

*Pear

 

DRESSING IDEAS

Serve this salad with a dressing of your choice, let’s see a few ideas here:
*Dijon mustard + olive oil + apple cider vinegar + lime
*Dijon mustard + olive oil + white wine vinegar 
*Tahini + lemon juice + garlic + salt
*Olive oil + vinegar + maple syrup

 

GET CREATIVE WITH VARIATIONS

Feel free to leave out any veggies you don’t like and double up on the ones you do.

You can customize this salad recipe easily, see a few tips here:

*Add fresh herbs for an aromatic punch, such as chopped parsley or dill.

*Add finely chopped garlic or onion for an extra kick.

*Add super healthy chia or hemp seeds.

*Add avocado for extra healthy fats.

RAW VEGGIE SALAD BOWL

(vegan, gluten, wheat and refined sugar free)

 

 

Preparation time: 5 minutes

Cooking time: N/A

Total time: 5 minutes

Serves: 1

 

Ingredients

*a handful of mixed lamb lettuce

*a handful of rocket leaves

*1 tbsp pomegranate seed

*2 cherry tomatoes

*1 tbsp walnut

*2 baby corn

*½ pear

*½ a carrot

 

Optional dressing

*¼ cup Dijon mustard

*2 tbsp maple syrup

*½ tsp garlic powder

*salt & pepper

 

Method

1. Wash the leaves, wash and chop the tomatoes, baby corn, carrot, pear and walnut.

2. Place all into a large bowl, add dressing and mix well.

Enjoy! 😊
 

Notes

*To Store: store in an airtight container in the fridge for up to 3 days.

It’s best to mix ingredients together just before serving.
