This time I made my creamy chia pudding with fresh and tasty raspberries straight from the market. Only 3 ingredients and very little effort is all it takes to enjoy this yummy treat. Chia seeds are rightfully famous because of their health benefits: they’re packed with nutrients and antioxidants; they’re great source of fibre, Omega-3 fatty acids, iron, calcium, antioxidants and protein. It’s not surprising that this pudding gives you a lot of energy! ๐
YOU’LL NEED
Here's what you need to make this recipe:
Raspberries: I love using fresh berries, especially if they’re in season, but frozen ones are fine too.
Chia seeds: you can try either black or white chia seeds, both work for chia pudding.
Milk: the choice of milk is up to preference. Many people prefer almond, soy, oat or coconut milk.
CHIA PUDDING
Chia pudding is a perfect make ahead breakfast that can be made with just a few simple ingredients. It is typically made with a specific ratio of chia seeds to plant milk. When the chia seeds are mixed with the milk you let them stand for a few hours and the seeds will expand and develop a gel-like consistency which has the thickness of a pudding. Chia seeds are a great superfood to add to your diet. With a minute of prep the night before, I can wake up to a yummy bowl of chia pudding for breakfast. Then I just add some fresh fruit etc and ready to go.
TOPPING IDEAS
There are a lot of ways to improve nutritional value and add more layers of flavour, let’s see a few ideas:
*nuts: mixed nuts, or finely chopped nuts such as walnuts or almonds
*fresh fruit: more berries, banana slices, or kiwis
*shredded coconut
*hemp seeds/flax seed
*goji berries
*if your pudding is too runny, whisk in more chia seeds and let it sit again until thickened.
*if it’s too thick, thin it with a touch of milk.
*chia pudding is perfect for batch making, on Sunday you can prepare your breakfast for the next five days!
*it’s optional to add sweetener/maple syrup/honey.
*a teaspoon of vanilla extract can give your pudding a nice flavour.
HEALTH BENEFITS
Chia seeds are a great superfood to add to your diet. Let’s see a few benefits of them:
*chia seeds are a great source of protein, fibre, healthy omega-rich fats, vitamins, calcium, magnesium and other minerals.
*health benefits of chia seeds include benefits for hair, skin and also for the nervous system.
