Vanilla Chia Pudding

Chia seeds are one of those items I always have in my cupboard and they don’t just sit there! I love how versatile they are, I can use them in chia pudding or sprinkle on top of a cake, you name it! This time I made a chia pudding with delicious vanilla taste! Chia pudding is a great option for breakfast, dessert or as a snack, its health benefits are amazing. Chia seeds are high in fibre, Omega-3 fatty acids, iron, calcium, antioxidants and plant protein, so this pudding will keep you going for a while! This yummy pudding is quick to make as long as you soak the chia seeds in advance. If you soak them in the night you have them ready for breakfast.😊

 
YOU’LL NEED
Here's what you need to make this recipe:
Milk: the choice of milk is up to preference. Many people prefer almond, soy, oat or coconut milk.
Chia seeds: you can try either black or white. Feel free to use whichever you prefer or available in your local shop.
Vanilla extract: add a teaspoon of vanilla extract to this pudding.
Vanilla yogurt: vegan vanilla yogurt has a solid vanilla flavour.
Sweetener: use your favourite sweetener, or maple syrup.


CHIA PUDDING
Chia pudding is a perfect make ahead breakfast that can be made with just a few simple ingredients. It is typically made with a specific ratio of chia seeds to plant milk. When the chia seeds are mixed with the milk you let them stand for a few hours and the seeds will expand and develop a gel-like consistency which has the thickness of a pudding. You can add sweetener or fruit of your choice (see below some tips).  These are just a few ideas of hundreds of options; feel free to add whatever makes you happy. Chia seeds are a great superfood to add to your diet. With a minute of prep the night before, I can wake up to a yummy bowl of chia pudding for breakfast. It’s perfect for days when I have very little or no time.

TOPPING IDEAS
There are a lot of ways to add to the nutritional value of this recipe, you can add the toppings for example:
*nuts: mixed nuts work well just as much as walnuts or almonds
*fresh fruit, such as raspberries, strawberries or kiwis
*cinnamon to sprinkle
*shredded coconut
*chocolate nibs


TIPS
*if your pudding is too runny, whisk in more chia seeds and let it sit again until thickened.
*if it’s too thick, thin it with a touch of milk.
*chia pudding is perfect for batch making, on Sunday you can prepare your breakfast for the next five days!

VANILLA CHIA PUDDING

(vegan, gluten, wheat and refined sugar free)

 

Preparation: 2 minutes 

Fridge: 2 hours or overnight

Cooking time: N/A

Serves: 1

 

Ingredients

*1 cup DF milk

*3 tbsp chia seeds

*1 tsp vanilla extract

*1 tsp vegan vanilla yogurt

*1 tsp sweetener or maple syrup

Toppings (optional)

*banana slices

*almond flakes

 

Method

1. In a medium bowl, gently stir together the chia seeds and milk. Cover and set in the fridge for at least 2 hours (or overnight).

 

2. Take chia pudding out of the fridge, give it a very good mix, breaking apart any clumps (it will become a pudding texture).


3. Mix in vanilla yogurt and vanilla extract. Add your favourite toppings.

Notes

* To Store: chia pudding can be stored in the fridge for up to 5 days in an airtight container.

* To Freeze: you can store chia pudding for up to 2 months.
