Paprika Mushroom and Hummus Toast

Easy and scrumptious breakfasts are always something I’m happy to experiment with. This toast with paprika mushrooms and hummus definitely ticks all the boxes. The tasty paprika mushrooms are such a mouthwatering combination with the hummus. šŸ˜Š The paprika powder provides aromatic flavours to the juicy mushrooms. This satisfying and filling meal is a nutrient booster, loaded with vitamins, minerals and healthy fatty acids. Healthy and super easy to make for breakfast, lunch or brunch; just perfect for lazy Sunday brunch! šŸ˜Š


YOU’LL NEED

The 3 main ingredients are mushrooms, hummus and bread.

Mushrooms: for this recipe I used chestnut mushrooms, but you can use any mushrooms you’d like, for example oyster, porcini or maitake.

Hummus: use homemade if you can or a good quality from the shop.

Bread: something hearty is the best, sourdough is great for this recipe, alternatively try bagels or any type you like. Toast bread just before serving. 

 

TOPPING IDEAS

This toast is delicious as it is, but there are a lot of options for adding more layers of nutrition and flavour. Feel free to be creative with garnishing!

*sprinkle of fresh herbs, such as parsley, coriander, basil or chive

*fresh vegetables, such as radishes or cucumbers

*hot sauce or red pepper flakes

*grated cheese

*sesame seeds

*hemp seeds

PAPRIKA MUSHROOM and HUMMUS TOAST

(vegan, gluten, wheat and refined sugar free)

 

Preparation time: 10 minutes

Cooking time: 15 minutes

Total time: 25 minutes

Yields: 4 slices

 

Ingredients

*4 slices of GF/DF bread

*150g mushrooms

*750ml vegetable broth

*1-2 tsp paprika powder

*1 tbsp olive oil

*4 tbsp hummus

*½ onion 

*salt & pepper to taste

 

Method

1. Peel and chop the onion and mushrooms.

2. In a saucepan heat oil then add the chopped onion and sauté for a few minutes.

3. Add mushrooms, vegetable broth, paprika powder and pepper. Fry on medium heat until mushrooms are cooked and all (or at least most of the) liquid evaporates. Season with salt.

4. Toast the bread and spread the hummus toast slices. Top with the mushrooms.

5. Serve immediately. Enjoy! šŸ˜Š

 

Notes

* Best fresh.

*To Store: you can store the mushroom stew in the fridge for up to 3 days. Keep the hummus separately.
