YOU’LL NEED
The 3 main ingredients are mushrooms, hummus and bread.
Mushrooms: for this recipe I used chestnut mushrooms, but you can use any mushrooms you’d like, for example oyster, porcini or maitake.
Hummus: use homemade if you can or a good quality from the shop.
Bread: something hearty is the best, sourdough is great for this recipe, alternatively try bagels or any type you like. Toast bread just before serving.
TOPPING IDEAS
This toast is delicious as it is, but there are a lot of options for adding more layers of nutrition and flavour. Feel free to be creative with garnishing!

PAPRIKA MUSHROOM and HUMMUS TOAST
(vegan, gluten, wheat and refined sugar free)
Preparation time: 10 minutes
Cooking time: 15 minutes
Total time: 25 minutes
Yields: 4 slices
*4 slices of GF/DF bread
*150g mushrooms
*750ml vegetable broth
*1-2 tsp paprika powder
*1 tbsp olive oil
*4 tbsp hummus
*½ onion
*salt & pepper to taste
Method
1. Peel and chop the onion and mushrooms.
2. In a saucepan heat oil then add the chopped onion and sauté for a few minutes.
3. Add mushrooms, vegetable broth, paprika powder and pepper. Fry on medium heat until mushrooms are cooked and all (or at least most of the) liquid evaporates. Season with salt.
4. Toast the bread and spread the hummus toast slices. Top with the mushrooms.
5. Serve immediately. Enjoy! š
Notes
* Best fresh.
*To Store: you can store the mushroom stew in the fridge for up to 3 days. Keep the hummus separately.
