YOU’LL NEED
Here are the basic ingredients you’ll need to make this recipe:

mushrooms: I used chestnut mushrooms

gnocchi: you can buy great quality gluten free and vegan or make your own.
*
garlic: I used fresh garlic, alternatively, you can use garlic powder or garlic paste.
*
yogurt: I used vegan yogurt but if you’re not on a dairy free diet you should add crème fresh or soured cream for best results.
*
paprika powder:
I like to use the sweet one, but if spicy is your thing get the hot one. By the way, Hungarian paprika is considered to be the best in colour and taste, that’s what I use.
IDEAS/TIPSAdding some fresh herbs or other toppings can add to the taste and nutrition. See a few examples here:
*fresh herbs: parsley or basil for example
*vegan cheese
*pine nuts
*for crispier results in this recipe I roasted the gnocchi in a separate pan. If you prefer you can add the cooked gnocchi to the mushroom sauce instead and cook for 1-3 minutes together.
*a creamy mushroom sauce often starts from roux, which is just a basically fat and flour cooked together to thicken sauces. My recipe uses a shortcut so I added vegan yogurt instead.

VEGAN CREAMY MUSHROOM SAUCE WITH GNOCCHI
Preparation: 5 minutes
Cooking time: 15 minutes

Serves: 2
Ingredients
*250g GF & vegan gnocchi
*1 red onion
*2 garlic cloves
*250g mushrooms
*2 tsp paprika powder
*2 tbsp olive oil
*1 tbsp vegan yogurt
*½ cup GF vegetable broth
*salt & pepper to taste
Method
1. Cook gnocchi according to package directions. Drain and set aside.
2. Peel and chop onion, garlic and mushrooms.
3. Heat 1 tbsp oil in a pan over medium heat. Add onion, sauté for about 3 minutes than add garlic for 1-2 minutes, stir often.
4. Add mushrooms, paprika powder and stock, and cook for about 10 minutes, stirring occasionally until mushroom is cooked. Season with salt & pepper.
5. Bring the sauce to boil and add the yogurt. Keep stirring and cook together for about 2 minutes.
6. In a small pan heat 1 tbsp oil and add gnocchi. Roast each side for few minutes until lightly toasted.
7. Mix gnocchi with mushroom sauce.
8. Serve immediately, garnish with your desired toppings.
Notes
*Best fresh.
*To Store: This dish keeps in an airtight container in the fridge for 2 days.
