Cinnamon Apple Ring Pancakes

Pancakes are one of my favourites, but who doesn’t love them? Cinnamon apple ring pancakes are a perfect treat at any time, they’re great for breakfast or as a dessert. This recipe is a good way to add more fruit to your diet, it’s basically, a healthier version of the ordinary pancakes. They're absolutely delicious! ๐Ÿ˜Š
 

YOU’LL NEED 

This recipe calls for simple, cupboard ingredients, including: 

Apples: you can use any apple you want here: for example, Pink Lady, Granny Smith or Gala. 

Flour:  I used gluten free, but all-purpose flour is fine too if you’re not on gluten free diet. 

Milk: I used oat milk, but any milk works fine.

Egg: I used a flax egg here.

Cinnamon: use ground cinnamon, or you can add just mixed spice. 

Oil: I used olive oil here-what I really like using-but you can use any oil you like.

 TIPS
*for best results cut the apple rings thin (about 1 cm) so they soften a bit more while frying
*just make sure you don’t over-mix the batter
*you might want to add sweetener to the batter
*why not try to add a teaspoon of nutmeg or mixed spice to the batter
*if you have any leftover batter just make a pancake

OPTIONAL TOPPINGS
Let’s see some yummy optional toppings. ๐Ÿ˜Š 
*sweetener, agave or maple syrup
*dash of cinnamon
*chopped walnuts
*vanilla yogurt
