Vegan Waldorf Salad

The Waldorf salad is a real treat. This salad is crunchy and sweet at the same time, with crisp apples and crunchy celery and nuts, and the grapes provide lovely sweetness. Just a little chopping, then mix everything together and it’s ready! Yay! This recipe is a vegan version of the classic Waldorf salad, as I used a vegan dressing. Perfect for any time of the year.  😊


YOU’LL NEED

Here are the ingredients you’ll need to make this recipe:

*Lettuce: I used Romaine lettuce in this recipe but use any you like and available in your local shop or market.

*Apples: Gala or Granny Smith works well, but feel free to use your favourite apple, they add a nice texture to this recipe.

*Celery: a crunchy and tasty addition.

*Grapes: red or white, they’ll give your salad a lovely sweetness.

*Walnuts: walnuts give a great texture to your salad. It isn’t a Waldorf without them!

*Mayonnaise: I used vegan mayo, you can substitute it with plain yogurt if you prefer.

*Lemon juice: lemon juice prevents the apples from browning also works well with the mayo as dressing.

 

IDEAS & TIPS

 Let’s see a few tips and topping ideas to increase taste and nutrition:

*Roast the walnuts if you prefer, in the oven or in a frying pan until fragrant. 

*Mayonnaise: you can substitute it with yogurt.

*Try this salad with raisins, and various nuts, if you prefer.

*Enjoy this salad with crusty bread.

*This recipe can work as an easy lunch, dinner or as a side dish.  

* The beauty of this dish is that it’s easily customizable, make your own version, if you like!

VEGAN WALDORF SALAD

(gluten, wheat and refined sugar free)

 

Preparation time: 5 minutes

Total time: 5 minutes

Serves: 2

 

Ingredients

* Romaine lettuce

*1 cup chopped apples

*1 cup diced celery

*1 cup halved red grapes

*½ cup walnuts, roughly chopped

Dressing:

*1 tbsp lemon juice

*6 tbsp vegan mayonnaise

 

Method

1. In a small bowl whisk together the mayonnaise and the lemon juice.


2. Chop the lettuce, core and dice the apple, slice the celery into bite sizes, half the grapes and chop the walnuts roughly.


3. Mix all together with the dressing.

Notes

*Best fresh.

*To Store: once you mixed everything, keep covered in the fridge for 1-2 days.
