YOU’LL NEED

 Here is the ‘long’ list of ingredients you’ll need to make this recipe:

*sweet potato: you’ll need a medium, oven baked sweet potato.

*banana: use a small ripe banana.

*avocado: best to use a ripe one.

 

IDEAS & TIPS

Let’s have a look at some ideas & tips:

*to make the sweet potato, poke some holes with a knife or fork, and bake whole at 400F/204C/gas mark, for 45-60 minutes. Let cool, remove and discard the potato skin before using it for this recipe.

*adjust sweetness, if you prefer less sweet: add less ripe banana.

*if this smoothie bowl is too thick add some milk.

*why not add almond or vanilla extract.

 

TOPPING IDEAS

There are a lot of ways to add more layers of flavour, for example:

*nuts: mixed nuts work well just as much as walnuts or almonds

*fresh fruit, such as raspberries, strawberries or kiwis

*spices: sprinkle a little cinnamon

*shredded coconut

*chocolate nibs

SWEET POTATO, AVOCADO and BANANA BREAKFAST BOWL

Ingredients

*1 small ripe banana

*1 avocado

*1 medium sweet potato (oven baked)

Optional toppings:

*goji berries, shredded coconut, roasted nuts or your favourite toppings

 

Method

1. Peel and chop banana, avocado and sweet potato.

2. Blend banana, avocado and sweet potato together until incorporated.  

3. Transfer to a bowl, sprinkle with goji berries, shredded coconut, roasted nuts or your choice of toppings.

4. Enjoy! 😊

 

Notes

*To Store: store this bowl in the fridge covered for up to 3 days.

*To Freeze: freeze it up to 3 months.
