SWEET POTATO HUMMUS

Serves: 4
Ingredients
* 1 medium sweet potato
* 2 tbsp extra virgin olive oil
* 400 g cooked chickpeas
* 1 tbsp tahini (sesame seed paste)
* 2 garlic cloves, crushed
* juice of 1 lemon
* 1 tsp ground turmeric
* 1 tsp paprika powder
* 4 tbsp water
* salt & pepper
Optional:
* parsley to decorate
Method
1. Preheat oven to 200C/400F/Gas mark 6 and bake sweet potato in the middle rack for about 20 minutes. When ready, let it cool.
2. Drain the chickpeas and rinse (might want to reserve some for serving).
3. Add the chickpeas, sweet potato, lemon juice, garlic, tahini and water to the bowl of a food processor.
4. Blend to a creamy puree.
5. Add turmeric, paprika powder, salt and pepper to taste.
6. Turn out to a bowl, drizzle with olive oil and chopped parsley.
7. Enjoy with warm pita wedges or your favourite veggies.
