Ingredients
*1 tbsp extra virgin olive oil
*1 red onion
*2 garlic cloves
*200g tomatoes
*1 tsp mixed herb
*2 tbsp tomato purée
*salt & pepper to taste
Optional:
*grated vegan cheese
*fresh basil leaves
Method
1. Fill a pot with water and bring to the boil. Add pasta and cook according to instructions. Drain.
2. Peel and finely slice the onion and garlic. Chop the tomatoes into smaller chunks.
3. Heat the oil in a frying pan over medium heat, add the onion and fry for a few minutes long until translucent. Add garlic for a minute or so until golden.
4. Add in the tomatoes, mixed herbs and tomato purée, increase heat and bring to the boil. Reduce heat to medium and simmer uncovered for about 15 minutes, stirring occasionally or until the sauce is thick and rich.
5. Add the drained pasta to the sauce, season and stir well.
6. Serve with grated cheese and fresh basil leaves if desired.
