Roasted Peppers and Tomatoes with Herbs

When I feel like eating something light yet filling, I often choose these roasted vegetables. This easy recipe comes together with very little effort, and the tomatoes and peppers develop delicious flavours with the herbs while they cook together in the oven. I like to have this dish with hummus, but you might want to try it with bread, quinoa or pasta instead. This dish is perfect for a healthy weeknight dinner or lunch, and you can meal prep it for a few days ahead!😊


INGREDIENTS

Here's what you need to make this recipe:

*Bell peppers (yellow, red and green)

*Tomatoes

*Olive oil

*Just Spices Vegetable Allrounder (Discount code: justcheckmypulse)

or use Mixed herbs


TIPS

Let’s see a few tips:

*Roast with crushed garlic and onion, if you prefer.

*Instead of the mixed herbs, add oregano, rosemary or thyme, or cumin and chilli powder.

*When ready, sprinkle some roasted pine nuts or sesame seeds for extra nutrition and taste.

*Perfect with bread, quinoa, couscous or as a side dish.

*This recipe can work for an easy dinner/lunch or for meal prep and the portion can be easily doubled or tripled.

ROASTED PEPPERS and TOMATOES with HERBS

Preparation time: 10 minutes

Cooking time: 40 minutes

Ingredients

*3 bell peppers

*3 tomatoes

*2 tbsp olive oil

*1 tbsp Just Spices Vegetable Allrounder (Discount code: justcheckmypulse)

 or mixed herbs

*salt & pepper

 

Method

  1. Preheat the oven to 428F/220C/Gas mark 7.


2. Wash and cut the tomatoes and peppers into bite-sized chunks.


3. On a large baking tray toss them together with the oil, mixed herbs, salt and pepper. Cook for about 40 minutes until everything is soft and cooked.


4. Serve with hummus, bread or pasta.

Notes

*To Store: keep the roasted vegetables in an airtight container in the fridge for up to 2-3 days.
