This easy recipe comes together with very little effort, and the tomatoes and peppers develop delicious flavours with the herbs while they cook together in the oven. I like to have this dish with hummus, but you might want to try it with bread, quinoa or pasta instead. This dish is perfect for a healthy weeknight dinner or lunch, and you can meal prep it for a few days ahead!😊
