Rainbow Tomato and Basil Salad

It doesn’t take much effort to impress your family and friends, sometimes the simplest dishes, like this tomato salad are the best ones. You can toss together this appetizing vegan salad in just a few minutes. It’s not only tasty, but because of the aromatic basil leaves, it smells amazing too! Low in fat and naturally gluten and dairy free! Yay! 😊


YOU'LL NEED

These are the ingredients you need for this recipe:

*Tomatoes: you can use different variations in different colours and sizes. I used Tiger and Capella Vine tomatoes in this recipe.

*Basil leaves: for best results use fresh leaves, it gives your salad an aromatic finish.

*Oil: extra virgin olive oil is the best option here; it has a rich flavour and makes a great addition to your nutritious diet.

*Balsamic vinegar: gives a delicate taste to your salad.

 

TIPS

Let’s see a few tips:

*For best results use ripe tomatoes from the local market or grocery.

*Allow salad to rest for 5-10 minutes at room temperature to improve the flavour.

*Serve this salad with crusty bread, crostini or pita chips or as side dish.

*Add finely chopped onion or garlic.

RAINBOW TOMATO and BASIL SALAD

(vegan, gluten, wheat and refined sugar free)

 

Preparation time: 5 minutes

Cooking time: N/A

Total time: 5 minutes

Serves: 6 as side dish or 3 as main


Ingredients

*1 kg tomatoes

*a few fresh basil leaves

*2 tbsp balsamic vinegar

*1 tbsp olive oil

*salt & pepper


Method

1. Wash the basil leaves, and wash and slice the tomatoes.

2. Place all on a platter, drizzle over the dressing and olive oil and season well.

Notes

*To Store: store in an airtight container in the fridge for up to 3 days.

It’s best to keep the dressing separately.
