This refreshing salad is made with oranges and avocados served on rocket and baby leaves and topped with pumpkin seeds. A colourful, juicy and flavourful option perfect for lunch or as side dish. A super quick and vibrant plant-based goodness, ready in minutes! 😊

*Rocket and baby leaves

*Oranges

*Avocados

*Pumpkin seed

*Olive oil

 

DRESSING IDEAS

Serve this salad with a dressing of your choice, let’s see a few ideas here:
*Dijon mustard + olive oil + apple cider vinegar + lime
*Dijon mustard + olive oil + white wine vinegar 
*Tahini + lemon juice + garlic + salt
*Olive oil + vinegar + maple syrup

ORANGE and AVOCADO SALAD

(gluten free, vegan and refined sugar free)

 

Preparation time: 10 minutes

Cooking time: N/A

Total time: 10 minutes

Serves: 2

 

Ingredients

*70g rocket and baby leaves

*2 oranges, plus zest and juice of 1

*2 avocados

*1 tbsp pumpkin seed

*1 tbsp olive oil

 

Method

1. Rinse the rocket and baby leaves, peel and slice oranges and the avocados.

2. Arrange the leaves on a large platter or bowl, and add the orange and avocado slices.

3. To make the dressing, whisk together orange juice, zest and oil.

4. Toss through the salad, sprinkle with pumpkin seeds and season. Serve immediately.

Notes

*To Store: store in an airtight container in the fridge for up to 3 days. It’s best to mix ingredients together just before serving.
