If you’re looking for a nutritional boost and a satisfying light meal then you should try this vegan avocado toast with chickpeas. Avocados and chickpeas are one of those items I always have at home. This toast is a healthy and filling option for lunch, snack or any time! Avocado and chickpeas go so well together, if you haven’t tried them yet, you have to!
Preparation time: 5 minutes
Cooking time: 20-25 minutes
Total time: 25-30 minutes
Serves: 2
* 1 avocado
* 240 g canned chickpeas
* 2 tbsp olive oil
* ½ tbsp paprika powder, or spice of your choice
* 2 slices of bread
* salt & pepper to taste
Method
1. Preheat the oven to 200C/400F/gas mark 6.
2. Drain and dry chickpeas completely with kitchen towel, gently patting them.
3. In a medium bowl, toss chickpeas with salt, oil and paprika powder. Spread evenly on a baking sheet.
4. Roast for about 20 minutes, until crispy, stirring them halfway.
5. While the chickpeas are roasting, make the avocado mash. Cut the avocado in half and with a spoon scoop out the flesh.
6. Mash it with a fork. Season with salt and pepper.
7. Toast your bread and spread the mashed avocado onto the toast slices. Top with roasted chickpeas.
8. Serve immediately. Enjoy! 😊
Notes
* Best fresh.
*To Store: you can store the avocado mash in the fridge for up to 24 hours. Roasted chickpeas last for a few days, but they won’t be so crunchy anymore.
