7 Ingredient Easy Vegetable Salad

This super healthy salad is easy to prepare and requires very minimal effort! Simply chop up some veggies and combine with chickpeas, sweetcorn and beans and you’ve got yourself a super fresh and yummy salad ready to go.


 This colourful salad combines some really amazing flavours and textures! Crunchy red cabbage and chicory, hearty red beans, sweet corn, nutty chickpeas, delicious cucumber and fresh spinach tossed together are the ingredients of this yummy salad. If your beans and chickpeas are already cooked, you just need to wash your vegetables then chop them up. Make a dressing of your choice, I’m giving you a few ideas on this, see below. Then, just toss everything together in a bowl, drizzle with dressing and you can enjoy this salad in 5 minutes or less!  

YOU'LL NEED
*spinach leaves
*cucumber
*red kidney beans, cooked
*chickpeas, cooked
*sweetcorn, cooked
*red cabbage
*chicory

DRESSING IDEAS
*olive oil + apple cider vinegar + Dijon mustard + lime
*tahini + lemon juice + garlic + salt
*olive oil + vinegar + honey

GET CREATIVE WITH VARIATIONS
You can customize this salad recipe easily, see a few tips here:
*Add avocado for extra healthy fats.
*Add finely chopped garlic or onion for an extra kick.
*Add super healthy chia or hemp seeds.
*Add peanut, almond or other nuts for nuttiness and healthy fats.
*Add fresh herbs for an aromatic punch, such as chopped parsley or dill.

Serves: 1

 

     Ingredients

*1 cup spinach leaves

*⅓ cup cucumber

*⅓ cup red kidney beans, cooked

*⅓ cup chickpeas, cooked

*⅓ cup sweetcorn, cooked

*½ cup red cabbage

*chicory leaves

 

Method

1. Wash spinach leaves. Wash and chop cucumber, red cabbage and chicory.

2. Drain the cooked chickpeas and beans.

3. Add sweetcorn.

4. Top with your favourite dressing and serve.

* Keeps in an airtight container in the fridge for 1-2days.
