Peanut Butter Banana Muffins with Chocolate Chips

 PEANUT BUTTER BANANA MUFFINS

with

Chocolate Chips

(gluten free, vegan and refined sugar free)

 

Preparation time: 10 minutes

Baking time: 20-25 minutes

Total time: 30-35 minutes

Servings: 10

 

Ingredients

*½ cup peanut butter

*2 bananas, mashed

*â…“ cup maple syrup or honey

*3 flax egg or 3 medium eggs

*1 tsp vanilla extract

 *1 tsp baking soda

Optional

*½ cup chocolate chips

 

Method

1. Preheat oven to 350F/180C/Gas mark 4. Line a 12-cup muffin tray with liners.

2. In a large bowl, mix together the mashed bananas, peanut butter, egg replacement (or the beaten eggs), maple syrup (or honey), baking soda and vanilla extract until smooth.

3. Next fold in the chocolate chips. Evenly divide batter into muffin liners.

4. Bake for 20-25 minutes until the toothpick comes out clean. Transfer muffins to a wire rack to cool.

Notes

* To Store: These muffins will keep for up to 3-4 days in an airtight container.

*To Freeze: They freeze well for up to 3 months. Let them thaw at room temperature.
