No-Bake Cherry Cheesecake

I’m a huge fan of the individual no-bake cheesecakes and I bet I’m not alone! To embrace the cherry season, this time I used refreshing cherries, but there are so many possibilities for substitution! This lovely dessert is budget friendly and definitely a healthy version as I didn’t use whipped cream nor sugar. Yay! 😊

  

YOU’LL NEED

The main ingredients you’ll need for this recipe:

*Cream cheese: I used dairy free cream cheese here, alternatively you can use whipped cream or plain yogurt.

*Biscuit: any type of biscuit is fine, or even shortbread biscuits or cookies are delicious too. 

*Butter: dairy free spread or butter works well.

*Cherries: fresh cherries, you can substitute them with berries or other fruit if you wish.  

 

OPTIONAL TOPPINGS

Why not try a few tricks to make these glasses even more decorative and tasty?

*sprinkle/add some:

*chocolate shavings

*chocolate drizzle

*chopped nuts

*maple syrup

*chia seeds

 No-Bake CHERRY CHEESECAKE

(gluten, dairy and refined sugar free)

 

   

Preparation: 1 hour 10 minutes

Cooking time: N/A

Total Time: 1 hour 10 minutes

Serves: 3 glasses

 

Ingredients

Biscuit crumbs layer:

*160 g gluten free & vegan biscuit

*3.5 tbsp vegan butter, melted

Cherry cream cheese layer:

*200g fresh cherries, stoned

*200 g unsalted vegan cream cheese 

*1 tbsp sweetener

*1 tsp vanilla extract

 

Method

1. Crush the biscuits roughly with your hands or pulse them in a food processor until they are finely ground.


2. In a medium bowl, mix together crumbs and melted butter until combined and crumbs are moistened. Spoon the mixture into the bottom of the serving glasses/ramekins.


3. Blend the cherries until smooth, mix with the cream cheese, sweetener and vanilla extract.


4. Spoon the mixture on top of the biscuit crumbs.


5. Place the glasses in the fridge for at least 1 hour.

Notes

*To Store: cover and place in the fridge for up to 3 days.

*To Freeze: cover and freeze up to 3 months.
