YOU’LL NEED
The 3 main ingredients are avocado, mushrooms and bread.
Avocado: any types of avocado is fine here, make sure it’s ripe.
Mushrooms: for this recipe I used chestnut mushrooms, but you can use any mushrooms you’d like, for example oyster, porcini or maitake.
Bread: use something hearty, sourdough is great for this recipe; toast it just before serving.
TOPPING IDEAS
This toast is delicious as it is, but there are a lot of options for adding more layers of flavour. Feel free to be creative with topping ideas. I like this toast with fresh spinach leaves or cress, or both! Further topping ideas:
*fresh herbs, such as parsley, basil, rosemary, oregano, parsley or sage
*fresh vegetables, such as radishes or cucumbers
*hot sauce or red pepper flakes
*grated cheese
*hemp seeds

AVOCADO TOAST WITH MUSHROOMS
(vegan, gluten, wheat, dairy and refined sugar free)
Preparation time: 10 minutes
Cooking time: 15 minutes
Total time: 25 minutes
Yields: 2
*150g mushrooms
*750 ml vegetable broth
* ½ tsp thyme
*½ onion
*1 tbsp olive oil
*1 avocado
*1 garlic clove
*2 slices of GF/DF bread
*salt & pepper to taste
Method
1. Peel and chop the onion and mushrooms.
2. In a saucepan heat oil then add the chopped onion and sauté for a few minutes.
3. Add mushrooms, vegetable broth, thyme and pepper. Fry on medium heat until mushrooms are cooked and all liquid evaporates. Season with salt.
4. Peel and mash avocado and garlic, and mix them together.
5. Toast your bread and spread the mashed avocado onto the toast slices. Top with the mushrooms.
6. Serve immediately. Enjoy! π

* Best fresh.
*To Store: you can store the avocado mash in the fridge for up to 24 hours. Keep the mushroom separated in the fridge for up to 2 days.
