This dessert is almost effortless, it’s one of the easiest desserts on Earth! The perfect last minute treat, it comes together in 15 minutes. The gooseberry provides a rich and zingy flavour, heavenly delicious! I must confess, I’m obsessed with this dessert. π
YOU'LL NEED
*gooseberry
*water
*sweetener
*coconut cream
*dairy free yogurt
TIPS
*I replaced some of the cream with yogurt for a lower fat version.
*For best results fold the fruit gently with the whipped cream instead of mixing.
*It looks prettier if you make fruit and whipped cream layers.
*You can incorporate other fruit or mixture of them, a variety of fruit works well, such as strawberries, blueberries, blackberries, kiwis and rhubarb.
*Sprinkle some biscuits, shortbread or granola on top of the fool.
*Add a splash of brandy, rum or liqueur for grown-ups.

GOOSEBERRY FOOL
(vegan, gluten, wheat and refined sugar free)
Preparation time: 5 minutes
Cooking time: 10 minutes
Total time: 15 minutes
Serves: 2-3
Ingredients
* 350g gooseberry, topped and tailed
* ½ cup water
* 4 tbsp sweetener
* 250 ml coconut cream
* 4 tbsp dairy free yogurt
Method
1. Add gooseberries and water in a medium sized saucepan, bring to the boil over medium heat.
2. Simmer for a few minutes until fruit is soft and starts to break down. Remove from heat, let it cool down. Add 3 tablespoon of sweetener.
3. Blend this gooseberry sauce in a blender or mash with a potato masher until pureed.
4. Whisk cream with 1 tablespoon of sweetener, add in the yogurt. (You can fold in the gooseberry as well at this stage).
5. Divide your cream and gooseberry mix between 2-3 glasses by spooning one layer of cream and one layer of gooseberry and so on (alternatively if you mix everything together spoon the mixture equally into the glasses).
6. Cool the glasses in the fridge for 1-2 hours or serve immediately.
7. Serve with biscuit or granola.
