Ingredients
* 1 cup (about 2) ripe bananas (mashed)
* 1 ¾ cups rice flour
* ¼ cup plant-based milk
* ⅓ cup oil
* 2 eggs
* ½ cup honey
* 1 tsp baking soda
* ½ tsp ground cinnamon
* 1 tsp vanilla extract
Optional:
* banana slices (to put on top before baking)
Method
1. Preheat oven to 330F/165C/Gas mark 3 and line a 9 x 5 loaf pan with parchment paper.
2. In a small bowl, combine the wet ingredients and whisk.
3. In another bowl, combine the dry ingredients and whisk.
4. Combine wet and dry ingredients. Fold in mix-ins if you’re adding any.
5. Pour the batter into your prepared loaf pan. Sprinkle with cinnamon if you like. Place banana slices on top.
6. Bake for 50 to 60 minutes, or until a knife inserted into the center comes out clean.
7. Remove from the oven and let cool for 15 minutes. Then transfer it to a cooling rack before slicing. Cut into 10 slices.

*To Store: keep this bread in a cool dry place in airtight container for up to 4 days.
*To Freeze: freeze it for up to 3 months.
