Easy Banana Bread

This banana bread is simple and easy to make, and it's just heavenly delicious! Let's have a look what makes this banana bread healthy. Using natural sweetener like honey that replaces refined sugar; using olive or coconut oil that replaces margarine; using 2-3 bananas, which are rich in potassium and fibre. Your perfect banana bread should be rich in flavour, moist inside, when you take a bite, it melts in your mouth. Yum! Give it a try! 😊

 

YOU’LL NEED YOU’LL NEED

The main ingredients you’ll need to make this recipe:  

Banana

Flour

Eggs

Oil

Milk

Honey

Baking soda

Ground cinnamon

Vanilla extract

 

OPTIONAL MIX-INS

See a few ideas here:

*spices: in this recipe I used ground cinnamon, you can add mixed spices instead. 

*nuts: walnuts, pecans or hazelnuts.

*chocolate: chocolate chips or buttons.

*dried fruit: why not try mixed dried fruit?

EASY BANANA BREAD


(gluten, wheat, dairy and refined sugar free)

 

Preparation time: 10 minutes

Baking time: 50-60 minutes

Total time: 60 minutes

Serves: 10

 

Ingredients

* 1 cup (about 2) ripe bananas (mashed)

* 1 ¾ cups rice flour

* ¼ cup plant-based milk

* ⅓ cup oil

* 2 eggs

* ½ cup honey

* 1 tsp baking soda

* ½ tsp ground cinnamon

* 1 tsp vanilla extract

Optional:

* banana slices (to put on top before baking)

 

Method


1. Preheat oven to 330F/165C/Gas mark 3 and line a 9 x 5 loaf pan with parchment paper.


2. In a small bowl, combine the wet ingredients and whisk.


3. In another bowl, combine the dry ingredients and whisk.


4. Combine wet and dry ingredients. Fold in mix-ins if you’re adding any.


5. Pour the batter into your prepared loaf pan. Sprinkle with cinnamon if you like. Place banana slices on top.


6. Bake for 50 to 60 minutes, or until a knife inserted into the center comes out clean.


7. Remove from the oven and let cool for 15 minutes. Then transfer it to a cooling rack before slicing. Cut into 10 slices.

Notes

*To Store: keep this bread in a cool dry place in airtight container for up to 4 days.

*To Freeze: freeze it for up to 3 months.
