Chia Pudding with Spinach and Mint

Check My Pulse • May 26, 2021

We love chia pudding for so many reasons! This time I made my chia pudding with a delicious spinach and mint mixture. Chia pudding is definitely one of those easy-to-make and great make-ahead breakfast ideas which we prefer so often. But there are no rules, you can have chia pudding at any time of the day if you wish. Its health benefits are amazing; it's high in fibre, Omega-3 fatty acids, iron, calcium, antioxidants and protein, hence this pudding will keep you going for a while! This yummy pudding is quick to make as long as you soak the chia seeds in advance. 😊

YOU’LL NEED

Here's what you need to make this recipe:

Milk: the choice of milk is up to preference. Many people prefer almond, soy, oat or coconut milk.

Chia seeds: you can try either black or white. Feel free to use whichever you prefer or available in your local shop.

Mint leaves: for best results use fresh mint leaves.

Spinach: I used fresh spinach leaves but I guess frozen ones work too.

Vanilla extract: add a teaspoon of vanilla extract to this pudding.

Vanilla yogurt: vegan vanilla yogurt has a solid vanilla flavour.

Sweetener: use your favourite sweetener, or maple syrup.

CHIA PUDDING

Chia pudding is a perfect make ahead breakfast that can be made with just a few simple ingredients. It is typically made with a specific ratio of chia seeds to plant milk. When the chia seeds are mixed with the milk you let them stand for a few hours and the seeds will expand and develop a gel-like consistency which has the thickness of a pudding. Chia seeds are a great superfood to add to your diet. With a minute of prep the night before, I can wake up to a yummy bowl of chia pudding for breakfast. Then I just add some fresh fruit etc and ready to go.

TOPPING IDEAS

There are a lot of ways to improve nutritional value and add more layers of flavour, let’s see a few ideas:

*nuts: mixed nuts, or finely chopped nuts such as walnuts or almonds

*fresh fruit, such as strawberries or kiwis

*shredded coconut

*hemp seeds/flax seedο»Ώ

*goji berries

TIPS

*if your pudding is too runny, whisk in more chia seeds and let it sit again until thickened.

*if it’s too thick, thin it with a touch of milk.

*chia pudding is perfect for batch making, on Sunday you can prepare your breakfast for the next five days!

HEALTH BENEFITS

Chia seeds are superfood and if you look around on the Internet or in the shops you can see they’re superstars too!

*chia seeds are a great source of protein, fibre, healthy omega-rich fats, vitamins, calcium, magnesium and other minerals.

*health benefits of chia seeds include benefits for hair, skin and also for the nervous system.

*chia seeds also contains antioxidants which fight the production of free radicals; antioxidants also help to control appetite; hence chia seeds may help you to lose weight!
