We love chia pudding for so many reasons! This time I made my chia pudding with a delicious spinach and mint mixture. Chia pudding is definitely one of those easy-to-make and great make-ahead breakfast ideas which we prefer so often. But there are no rules, you can have chia pudding at any time of the day if you wish. Its health benefits are amazing; it's high in fibre, Omega-3 fatty acids, iron, calcium, antioxidants and protein, hence this pudding will keep you going for a while! This yummy pudding is quick to make as long as you soak the chia seeds in advance. π
YOU’LL NEED
Here's what you need to make this recipe:
Milk: the choice of milk is up to preference. Many people prefer almond, soy, oat or coconut milk.
Chia seeds: you can try either black or white. Feel free to use whichever you prefer or available in your local shop.
Mint leaves: for best results use fresh mint leaves.
Spinach: I used fresh spinach leaves but I guess frozen ones work too.
Vanilla extract: add a teaspoon of vanilla extract to this pudding.
Vanilla yogurt: vegan vanilla yogurt has a solid vanilla flavour.
Sweetener: use your favourite sweetener, or maple syrup.
Chia pudding is a perfect make ahead breakfast that can be made with just a few simple ingredients. It is typically made with a specific ratio of chia seeds to plant milk. When the chia seeds are mixed with the milk you let them stand for a few hours and the seeds will expand and develop a gel-like consistency which has the thickness of a pudding. Chia seeds are a great superfood to add to your diet. With a minute of prep the night before, I can wake up to a yummy bowl of chia pudding for breakfast. Then I just add some fresh fruit etc and ready to go.

There are a lot of ways to improve nutritional value and add more layers of flavour, let’s see a few ideas:
*nuts: mixed nuts, or finely chopped nuts such as walnuts or almonds

*if your pudding is too runny, whisk in more chia seeds and let it sit again until thickened.
*if it’s too thick, thin it with a touch of milk.

Ingredients
*1 cup DF milk
*½ cup chia seeds
*1 tsp vanilla extract
*½ cup of vegan vanilla yogurt
*handful of fresh spinach leaves
*a few fresh mint leaves

Method
1. In a medium bowl, gently stir together the chia seeds and milk. Cover and set in the fridge for at least 2 hours (or overnight).
2. Take chia pudding out of the fridge, give it a very good mix, breaking apart any clumps (it will become a pudding texture).
3. Place the washed mint and spinach leaves into a blender, add yogurt and blend until smooth. Add sweetener/maple syrup and vanilla extract.
4. Pour a jar/bowl the chia pudding and add the green smoothie mixture.

Notes
* To Store: store chia pudding in an airtight container separately in the fridge for up to 5 days. Keep the green smoothie in the fridge for up to 2-3 days.
* To Freeze: you can freeze chia pudding for up to 2 months.
