MEDITERRANEAN PASTA with COURGETTE
(vegan, gluten, wheat and refined sugar free)

Ingredients
*55g of dry vegan pasta per person
*1 small courgette
*1 small tin chopped tomato
*⅓ cup Italian olives, pitted
*1 cup vegetable stock
*1 tsp dried oregano
*1 tsp dried basil
*3 cloves garlic
*1 tbsp olive oil
*½ onion
*salt & pepper
Optional toppings:
*finely chopped onion
*fresh basil
Method
1. Heat oil over medium heat. Wash and chop courgette into cubes.
2. Add onion and sauté until translucent, for a few minutes. Keep stirring.
3. Add the rest of the ingredients, tomatoes, courgette, olives, herbs and vegetable stock.
4. Bring to boil, then reduce heat and simmer until everything is cooked. Stir occasionally.
5. In the meantime, cook pasta until desired tenderness.
6. Drain the pasta and add sauce, toss to coat.
7. Season with salt and pepper.

Notes
*To Store: this dish keeps in an airtight container in the fridge for 2-3 days.
*To Freeze: this sauce can be frozen for up to 3 months.
