Chia Pudding with Berry Granola and Figs

Chia pudding is a perfect make ahead breakfast that can be made with just a few simple ingredients. This chia pudding recipe with berry granola and figs is so delicious and good for you! It's packed with flavour and fibre which makes it perfect for breakfast, snack or healthy dessert! 


WHAT IS CHIA PUDDING

Chia pudding is typically made with a specific ratio of chia seeds to plant milk. When the chia seeds are mixed with the milk you let them stand for few hours and the seeds will expand and develop a gel like consistency which has the thickness of a pudding. You can add sweetener or fruit of your choice (see below some tips). This pudding with sweet figs and the crunchy granola keeps me fuelled for hours. Chia seeds are a great superfood to add to your diet. With a minute of prep the night before, I can wake up to a yummy bowl of chia pudding for breakfast. It’s perfect for days when I have very little or no time.


YOU’LL NEED
Chia pudding is an easy, make ahead breakfast that can be made with just a few simple ingredients. The two ingredients you need are chia seeds and milk. For extra nutrition and flavour see some tips below. This time I added berry granola and figs.   
Chia seeds: you can try either black or white. Feel free to use whichever you prefer or available in your local shop.
Plant milk: is up to preference. Many people prefer almond, oat or coconut milk.
Figs: fresh figs are great for natural sweetness.
Berry granola: I used a vegan and gluten free granola for a little crunchiness.

TOPPING IDEAS
There are a lot of ways to add to the nutritional value of this recipe, you can add the toppings for example:
*nuts: mixed nuts work well just as much as walnuts, almonds or pumpkin seeds
*fresh fruit, such as raspberries, kiwis or figs
*cinnamon to sprinkle

CHIA PUDDING WITH BERRY GRANOLA AND FIGS

Serves: 1

Ingredients
*1 cup plant milk
*½ cup chia seeds (black, white or mixed)

Method
1. In a small bowl add chia seeds and milk, mix well to combine. Leave in the fridge overnight to thicken.
2. In the morning, stir through with a spoon.
3. Add berry granola and figs or your choice of toppings. Enjoy! 😊

 Notes
*To Store: you can store chia pudding for 5 days in the fridge in an airtight container.
*To Freeze: you can freeze chia pudding for up to two months.
