Pumpkin Pie Drink

It gets colder and colder outside and we tend to look more and more for various comfort foods and drinks. This heart-warming beverage has a thick and creamy structure, and a truly enjoyable pumpkin pie taste. I promise, you will want to make it again and again! Curl up on your sofa, get a warm blanket and get cosy with this beautiful drink! Add some whipped cream on top, yum! Perfect while watching your favourite shows or reading a book. 😊 


YOU’LL NEED

Here are the ingredients you’ll need to make this recipe:

*Pumpkin puree: make fresh if you can: just halve a pumpkin, scoop out the seeds, and bake for about 50 minutes. Once it’s cold blend it in a blender or food processor. If you prefer stronger pumpkin flavour, increase the puree by 1-2 tablespoons. Alternatively, feel free to use butternut squash.

*Milk: I used dairy free milk, but any milk will work fine.  

*Mixed spice: mixed spice is commonly used in the UK; the American version called pumpkin pie spice (also known as pumpkin spice). If you don’t have it at home, these spices are actually a mixture of ground cinnamon, ground nutmeg, ground ginger and ground cloves; if you have them in your cupboard, you can make it yourself!

*Vanilla extract: it gives a touch of kick to your drink.

*Maple syrup: or anything you fancy to sweeten this drink with. You may want to add it last and adjust the recommended amount.

 PUMPKIN PIE DRINK


Preparation: 3 minutes 

Cooking time: 5 minutes

Total time: 8 minutes

Serves: 3

 

Ingredients

*3 cups dairy free milk

*1+ ½ cup pumpkin puree

*1 tsp pumpkin pie spice/mixed spice

*1 tsp vanilla extract

*⅓ cup maple syrup

Optional:

*vegan whipped cream, ground cinnamon

 

Method

1. Add milk, pumpkin puree, spice, vanilla extract and maple syrup to a blender and blitz for a couple of seconds.

2. Heat this liquid up in a saucepan over medium heat for 5 minutes until it gets thicker, stirring constantly.   

3. Take the saucepan off the heat and pour into mugs/glasses.

4. Decorate with vegan whipped cream and sprinkles of cinnamon.

5. Drink hot or cold. Sip and enjoy! 😊

 

Notes

*Best fresh.

*To Store: You can store this drink in the fridge for up to 2-3 days.
