NO BAKE BANANA CHEESECAKE in a GLASS
(vegan, gluten, wheat and refined sugar free)

Serves: 2 small glasses
Ingredients
* 150 g (or 1 mug) biscuits (GF, DF)
* 2 tbsp coconut oil, melted
* 250 g vegan cream cheese
* 1 ripe banana, mashed (leave few slices for decoration)
* 1 tsp vanilla extract
* 1 tbsp coconut milk
Optional toppings:
*ground cinnamon, chopped nuts, biscuit pieces
Method
1. Put the biscuits in a food processor and pulse until they are finely ground.
2. In a medium bowl, mix together crumbs and melted coconut oil until combined and crumbs are moistened. Spoon the mixture into the bottom of two serving glasses.
3. Add cream cheese, mashed banana, milk and vanilla extract to a mixing bowl and mix until combined.
4. Spoon the mixture into the glasses on top of the crust.
5. Top your glasses with few banana slices and your choice of topping.

*To Store: this dessert keeps covered in the fridge for up to 2-3 days.
