Fluffy Yogurt Pancakes

Perfectly fluffy and heavenly delicious pancakes! A family favourite, perfect for weekends! Believe me, these pancakes make it worth getting out of bed!😊

YOU’LL NEED
The main ingredients of these yummy pancakes are the following:
Flour:  I used gluten free, but all-purpose flour is fine too if you’re not on gluten free diet.  
Eggs: for vegan option: you can substitute eggs for flax eggs.
Yogurt: I used plain dairy free yogurt.

TOPPING IDEAS
Let’s remember the right topping can add not only to the taste but to the nutrition too. My toppings today were dairy free yogurt, raspberries and honey. See a few topping ideas here: 
*fresh fruit: berries, sliced bananas
*drizzle of honey or maple syrup
*finely chopped nuts or seeds
*sprinkle of cinnamon
*chocolate spread
*dairy free yogurt
*chocolate chips

FLUFFY YOGURT PANCAKES

(gluten, wheat, dairy and refined sugar free)

 

 Preparation: 1 minutes 

Cooking time: 5 minutes

Total time: 6 minutes

Serves: 1-2

(do you want to share it, sure?😊 )

 

Ingredients

*2 cup gluten free flour

*½ cup dairy free yogurt

*1 tsp baking powder

*½ tsp baking soda

*1 tbsp powdered sweetener

*2 eggs (of flax egg)

*pinch of salt

*1 tbsp oil for frying


Optional toppings:

*dairy free yogurt

* fresh fruit

*honey or maple syrup

 

Method

1. Preheat frying pan over a medium heat. Once hot, use a splash of oil.

2. Beat the eggs until combined.

3. Mix with the yogurt.

4. Combine flour with baking powder, baking soda, sweetener and salt.

5. Mix the dry and the wet ingredients until combined.

6. Pour the mix into the pan and swirl around to coat the base. Fry on medium heat.

7. Fry for a minute or until golden on the bottom, then flip the pancake over and cook the other side. Repeat until you have used all the mixture, stirring the mixture between pancakes and adding more oil to the frying pan if necessary.

8. Serve immediately with honey/maple syrup, dairy free yogurt, fresh fruit or a filling of your choice.

Notes

* To Store: the pancake mixture keeps for a few days if you store it covered in the fridge. Give it a good whisk before using.

* To Freeze: freeze the pancakes in airtight box/bag for up to 2 months.
