Beetroot Soup

What do we do on these gloomy winter days? Certainly, we cook a delicious and colourful soup! 😊Beetroot soup has a beautiful ruby colour and lovely earthy flavour that makes it the perfect option for cold winter days. This quick and easy blender soup is naturally vegetarian and gluten free and my version is vegan too. I’ve seen a few different variations of this soup, here I’m showing you my version.  πŸ˜Š


YOU’LL NEED
Here are the main ingredients you’ll need to make this recipe:
*beetroot: main ingredient, don’t leave it out!  😊
*potato: potato gives creaminess and richness to the dish. 
*carrots: carrots give sweetness to this dish.


IDEAS & TIPS
Here I’m showing you some ideas & tips to increase taste and nutrition:
You can change the ingredients slightly, why not use up your leftovers to reduce food waste? You could add:
*1-2 tomatoes
*1 celery
*1 small can of white beans
Serve this soup with:
*croutons
*radishes + feta cheese
*add a dollop of vegan yogurt/sour cream/mayo

 BEETROOT SOUP

(vegan, gluten, wheat and refined sugar free)

 

 Preparation time: 10 minutes

Cooking time: 30 minutes

Total time: 40 minutes

Serves: 4

 

Ingredients

*3 medium raw beetroot

*1 large potato

*1 white onion

*2 carrots

*2 cloves garlic

*1 liter vegetable stock

*2 tbsp olive oil

*salt & pepper to taste

 

Optional toppings

*vegan soured cream/yogurt

*finely chopped pistachio

 

Method

1. Peel and chop potatoes, carrots, beet, onion and garlic.   

2. Heat oil in a large saucepan. Add onion, fry for a few minutes, until the onion is translucent, then add in garlic for a minute, stirring constantly.

3. Add the vegetable stock, potato, carrots, beet and season well. Once boiling, reduce heat and simmer for about 25 minutes. Stir occasionally.

4. Remove from heat. Leave to cool a little. Blend until smooth/creamy.

5. Taste and adjust if necessary.

6. Garnish & Enjoy! 😊


Notes

*To Store: store this soup in sealed container in the fridge for up to 3 days.  

*To Freeze: it can be frozen for several months.
