Easy Carrot Soup

A bowl of light and comforting soup always lifts my spirits. Especially soups with beautiful and bright colours like this carrot soup. If you adore carrots in any form this soup is for you. Making soup is also a good way to use up carrots. With only five ingredients and very little effort you can enjoy this healthy dish. 😊 


YOU’LL NEED

Here are the five ingredients you’ll need to make this recipe:

*carrots: any carrot type is fine (for example baby carrot or rainbow mix), please note some varieties are sweeter than others, also cooking time might differ slightly.

*onion: I used white onion, but any onion is fine here. 

*vegetable broth: it adds a depth of flavours to your soup.

*clove garlic: if you don’t mind garlic you can add more.

*olive oil: extra virgin or any oil you use for cooking.

 

IDEAS & TIPS

Let’s see a few everyday tips:  

*Keep it chunky: cut the carrots into small slices/chunks and omit the step of puréeing it.

*Make it thinner: by adding more water/stock to the soup when cooking it.

*Make a big batch: like most soups, this one also offers the great opportunity to double or triple with ease. Make a big batch and freeze some for later for a speedy midweek meal.

*Add ginger while cooking: a teaspoon of ginger can be very tasty and adds to the nutritional value.

*Add garnishes: there are endless possibilities to finish the soup, see some ideas below.


SERVE THIS SOUP WITH

This soup is tasty by itself, but there are endless possibilities to finish the soup with either of the followings or combining some of them:

*add a dollop of vegan yogurt

*fresh bread of your choice

*finely chopped chives

*roasted onion flakes

*toasted almonds

*paprika powder

*cheese toast

*garlic bread

*chili flakes

*croutons

*pretzels

EASY CARROT SOUP

(vegan, gluten, wheat and refined sugar free)

 

Preparation time: 5 minutes

Cooking time: 15 minutes

Total time: 20 minutes

Serves: 2


Ingredients

*500g carrot

*1 white onion

*1 clove garlic

*1 tbsp olive oil

*750ml vegetable broth

*salt & pepper to taste

Optional toppings

*pumpkin seeds

*vegan yogurt

 

Method

1. Peel and chop the carrots and onion. Chop the garlic finely.   

2. Heat oil in a large saucepan. Add onion, fry on medium heat for about 5 minutes, until the onion is translucent. Add garlic in and fry together for a minute.

3. Add the carrots and vegetable broth, season well. Once boiling, reduce heat and simmer for about 15 minutes, or until everything is cooked. Stir occasionally.

4. Remove from heat. Leave to cool a little bit, then blend until smooth.

5. Taste and adjust if necessary.

6. Garnish & Enjoy! 😊


Notes

*To Store: store this soup in sealed container in the fridge for up to 3-4 days. 

*To Freeze: it can be frozen for up to 6 months.
