YOU’LL NEED

*carrots: any carrot type is fine (for example baby carrot or rainbow mix), please note some varieties are sweeter than others, also cooking time might differ slightly.
*onion: I used white onion, but any onion is fine here.

*olive oil: extra virgin or any oil you use for cooking.

*Add ginger while cooking: a teaspoon of ginger can be very tasty and adds to the nutritional value.

Ingredients
*1 white onion
*1 clove garlic
*1 tbsp olive oil
*750ml vegetable broth

Method
1. Peel and chop the carrots and onion. Chop the garlic finely.
2. Heat oil in a large saucepan. Add onion, fry on medium heat for about 5 minutes, until the onion is translucent. Add garlic in and fry together for a minute.
3. Add the carrots and vegetable broth, season well. Once boiling, reduce heat and simmer for about 15 minutes, or until everything is cooked. Stir occasionally.
4. Remove from heat. Leave to cool a little bit, then blend until smooth.
5. Taste and adjust if necessary.

Notes
*To Store: store this soup in sealed container in the fridge for up to 3-4 days.
*To Freeze: it can be frozen for up to 6 months.
