Caramelised Banana with Porridge

Get ready for an extremely delicious and cosy breakfast bowl! This dish is made with sweet and golden-brown caramelised banana served over creamy porridge. Banana and porridge are a super classic combo, something I make as often as I can, because it’s quick, nutritious and sets me up well for the day ahead. Serve with a touch of cinnamon and crunchy nuts for an amazing vegan breakfast. This breakfast will definitely impress your partner or family. By the way, it only takes about 10 minutes to make.


YOU’LL NEED
Here are the basic ingredients you’ll need to make this recipe:
*oats: to keep this recipe gluten free, just use certified gluten free oats.
*vegan milk: you can substitute the milk for water, but porridge with milk is much creamier.
*banana: try to aim for a ripe banana.
*coconut oil: you can substitute it for vegan butter/spread. 
*agave syrup: agave syrup helps to caramelise the banana very nicely. 
*cinnamon: just pairs so nicely with the caramelised banana.
*vanilla: you can leave this out if you wish.
*toppings of choice: obviously the banana makes a great topping for the porridge, but if you need more inspiration see below. 


TOPPING IDEAS
Bananas make a great topping for porridge, but it’s worth adding some toppings for extra nutrition. See a few examples here:
*almond/peanut butter: another great combination with banana
*seeds (sesame, chia or poppy seeds)
*nuts (walnuts, pecan, cashews)
*spices (more cinnamon!)
*dark chocolate chips

*bananas have high potassium and low sodium content which may help lowering blood pressure.
*the heart-healthy oats are full of fibre and low in cholesterol.

CARAMELIZED BANANA WITH PORRIDGE
 
Preparation + Cooking time: 10 minutes
Total time: 10 minutes
Serves: 1

Ingredients
*½ cup porridge
*1 banana
*1 cup of DF milk
*1-2 tbsp coconut oil
*2 tbsp agave syrup
*sprinkle of cinnamon
*dash of vanilla extract
*optional toppings: fresh fruit, flaked almonds, mixed seeds or other desired toppings


Method
1. Cook the porridge according to package directions.
2. In the meantime heat the coconut oil over medium heat in a frying pan. Add the agave syrup, cinnamon and vanilla, and let it incorporate and sizzle for a little bit.
3. Cut the banana in half lengthways then add to the pan and simmer for a few minutes each side (flipping them very carefully) until golden brown. Your kitchen will smell amazing!
4. Remove from heat, add to your porridge. Add other toppings of your choice.

*To Store: you can keep this dish in an airtight container in the fridge for 1-2 days.
