Here are the basic ingredients you’ll need to make this recipe:
*oats: to keep this recipe gluten free, just use certified gluten free oats.
*vegan milk: you can substitute the milk for water, but porridge with milk is much creamier.
*banana: try to aim for a ripe banana.
*coconut oil: you can substitute it for vegan butter/spread.
*agave syrup: agave syrup helps to caramelise the banana very nicely.
*cinnamon: just pairs so nicely with the caramelised banana.
*vanilla: you can leave this out if you wish.
*toppings of choice: obviously the banana makes a great topping for the porridge, but if you need more inspiration see below.

CARAMELIZED BANANA WITH PORRIDGE

Serves: 1
Ingredients
*½ cup porridge
*1 banana
*1 cup of DF milk
*1-2 tbsp coconut oil
*2 tbsp agave syrup
*sprinkle of cinnamon
*dash of vanilla extract
*optional toppings: fresh fruit, flaked almonds, mixed seeds or other desired toppings
Method
1. Cook the porridge according to package directions.
2. In the meantime heat the coconut oil over medium heat in a frying pan. Add the agave syrup, cinnamon and vanilla, and let it incorporate and sizzle for a little bit.
3. Cut the banana in half lengthways then add to the pan and simmer for a few minutes each side (flipping them very carefully) until golden brown. Your kitchen will smell amazing!
4. Remove from heat, add to your porridge. Add other toppings of your choice.
