Oven Roasted Carrots

I will never get tired of roasted veggies—they’re just irresistible! Carrots are not only healthy but actually quite versatile too! Think of carrot cake or carrot mash, you know what I mean? ๐Ÿ˜Š This basic oven roasted carrot dish can make a healthy weeknight side dish or an easy lunch by adding some other yummy vegetables. You can make this affordable dish with only a few ingredients and very little effort. Just like those other roasted vegetables, carrots roast well in the oven and develop delicious flavours.


YOU’LL NEED
You’ll need these simple ingredients to make this recipe:
Carrots: use fresh carrots. Bear in mind, some carrot varieties will roast in as little as 25 minutes, but regular carrots are denser and usually require longer roasting times, about 35 to 40 minutes.
Oil: use good quality oil such as extra virgin olive oil.
Salt & pepper: add generously.

VERSIONS 

If you want to be adventurous why not check out these roasted carrot versions:
*honey glazed carrots: simply toss carrots with honey and a good quality oil.
*butter glazed carrots: alternatively use butter instead of oil, and your carrots will turn out fabulous.
*maple glazed carrots: for the vegan version use maple syrup instead of honey.
*’spiced carrots’ is another level, why not try:
*cumin, chili powder, salt and olive oil or
*cinnamon, chili powder, salt and olive oil.

 OVEN ROASTED CARROTS

 

Preparation: 5 minutes 

Cooking time: 30 minutes

Total time: 35 minutes

Serving: 2

 

Ingredients

*6-8 carrots, peeled and cut into chunks

*2 tbsp extra-virgin olive oil

*optional for garnish: freshly chopped parsley, dill or chives

 

Method

1. Preheat the oven to 356F/180C/Gas mark 4.

2. On a large roasting tin, toss carrots with olive oil and seasoning, arrange them on a single layer.

3. Roast for about 30 minutes, until tender.

4. Garnish with fresh herbs, if desired, before serving.

5. Enjoy! ๐Ÿ˜Š

 

Notes

*Best fresh.

*To store: leftover carrots keep well; in an airtight box place them in the fridge for up to 3-4 days.

*To freeze: not recommended, but if you really have to freeze them, after defrosting they’re best in soups.
