When it comes to root vegetables sweet potato is one of my absolute favourites! Combined with fresh kale, cucumber, carrot, cauliflower and quinoa this is truly healthy plant-based dish. Moreover, this bowl contains one of the many pulses, namely, lentils. This super nutrient packed meal can be customized easily by adding a few other ingredients. This is a perfect dish for a healthy weeknight dinner or lunch, you can also meal prep it for days ahead!

YOU’LL NEED
Here's what you need to make this recipe:
*sweet potato
*cucumber
*carrot
*kale
*cauliflower
*lentils
*quinoa
*olive oil
*lemon
TIPS
Let’s see a few tips:
*the tahini sauce is my recommendations, but feel free to use your favourite dressing and toppings. The beauty of this salad is that it’s easily customizable, make your own version, if you like!
*this recipe can work for an easy dinner/lunch or for meal prep and the portions easily doubled or tripled.
*add your left overs or substitute some of the ingredients.
*for roasting why not add a few sprigs thyme or rosemary.
*you can have the carrots raw or cooked, it’s up to you!
*to revive this recipe as new, reheat the roasted/cooked ingredients on a baking sheet or microwave for 1-2 minutes until warm, then add the fresh ingredients and the dressing.
SUBSTITUTION
This dish is easily customizable, add your left overs or substitute some of the ingredients; make your own version, if you like! Just want to give a few substitution ideas:
*sweet potato can be swapped for butternut squash or any other winter squash variety.
*cauliflower can be swapped with broccoli or courgette.
*carrot/cucumber can be swapped with fresh tomatoes and pepper.
*lentil can be swapped with beans for example.
