Banana-Chocolate Pudding

I guess after the holidays some of us don't have a strong desire to bake, am I right? Help is at hand! This no bake banana-chocolate pudding doesn’t require any baking skills, anyone can make it and it's ready in a few minutes! Moreover, it’s deliciously creamy, healthy and satisfying too.  😊 



YOU’LL NEED
Here are the ingredients you’ll need to make this delicious dessert:
Banana: if you use ripe banana, you don’t need to add sweetener.
Vegan chocolate: the best is to use dark chocolate, which gives a rich flavour.
Vegan double cream: double cream provides a light consistency.
Vanilla extract: it adds a depth of flavour.

TIPS
There are a few ways to add to the nutritional value of this dessert, for example:
*nuts: you can add mixed nuts, such as walnuts, almonds or macadamia nuts.
*you can sprinkle on top of your dessert: rolled oats, cinnamon or chia seeds.
*if you don’t have ripe banana, use bit of sweetener/honey/maple syrup.
*you can blend a half of an avocado with the banana for extra nutrition.

 BANANA-CHOCOLATE PUDDING

(vegan, gluten, wheat and refined sugar free)

Preparation time: 5 minutes 

Total time: 5 minutes

Serves: 1

 

Ingredients

*1 ripe banana, sliced

*50 g vegan dark chocolate

*β…“ cup vegan double cream

*1 tsp vanilla extract

Toppings:

*shredded vegan dark chocolate

*vegan double cream

 

Method

1. Add the banana slices to the blender and blend it until creamy and smooth.  

2. Cut the chocolate into chunks. Melt the chunks in a small saucepan or in microwave until it has melted completely. Let it cool.

3. With a hand mixer beat the double cream until you reach a thick consistency.

4. Add the melted chocolate, blended banana, vanilla extract and the double cream (you can leave some for decoration) and fold it together just until combined.

5. Spoon into serving glass.

Enjoy!

 

Notes

* Best fresh.

*To Store: you can keep it in the fridge for 2-3 days.
