Ingredients
*1 cup spinach leaves
*⅓ cup cucumber
*⅓ cup red kidney beans, cooked
*⅓ cup chickpeas, cooked
*⅓ cup sweetcorn, cooked
*½ cup red cabbage
*chicory leaves
Method
1. Wash spinach leaves. Wash and chop cucumber, red cabbage and chicory.
2. Drain the cooked chickpeas and beans.
3. Add sweetcorn.
4. Top with your favourite dressing and serve.
